Mediterranean Burgers

Ingredients

  • 6 whole wheat bakery hamburger buns
  • 3 (2-count) pkg fresh plant-based burger patties
  • 1 red onion, thinly sliced
  • 2 Tbsp olive oil
  • ¾ cup sun-dried tomatoes in oil, drained
  • ¾ cup plain hummus
  • 2 cups baby arugula

Instructions

  1. Preheat broiler. Place buns on a baking sheet; broil until toasted.
  2. Cook patties according to package directions.
  3. Meanwhile, sauté onion in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until lightly browned.
  4. Reduce heat to medium; stir in tomatoes. Cook 1 minute or until thoroughly heated. Spread hummus on buns, and top with patties, onion mixture, and arugula.

  • 3 cups seedless red grapes

Side Dish Instructions

  1. Chill grapes until ready to serve.
