Mediterranean Burgers
Chilled Red GrapesIngredients
- 6 whole wheat bakery hamburger buns
- 3 (2-count) pkg fresh plant-based burger patties
- 1 red onion, thinly sliced
- 2 Tbsp olive oil
- ¾ cup sun-dried tomatoes in oil, drained
- ¾ cup plain hummus
- 2 cups baby arugula
Instructions
- Preheat broiler. Place buns on a baking sheet; broil until toasted.
- Cook patties according to package directions.
- Meanwhile, sauté onion in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until lightly browned.
- Reduce heat to medium; stir in tomatoes. Cook 1 minute or until thoroughly heated. Spread hummus on buns, and top with patties, onion mixture, and arugula.

- 3 cups seedless red grapes

- Chill grapes until ready to serve.
