Ingredients

  • 1½ cups orzo
  • 6 Tbsp olive oil vinaigrette, divided
  • 1½ (8-oz) blocks halloumi cheese, cut into ¾-inch-thick slices (see Note)
  • 1 small red onion, cut into wedges
  • 2 red bell peppers, halved and seeded
  • 3 zucchini, cut into planks
  • ½ cup chopped fresh basil
  • 3 Tbsp balsamic glaze

Instructions

  1. Preheat grill (or grill pan) to medium-high heat. Cook orzo according to package directions; drain, toss with 2 Tbsp vinaigrette.
  2. Brush cheese, bell peppers, and zucchini with remaining ¼ cup vinaigrette. Grill vegetables, covered, 8 minutes or until tender and slightly charred. Grill cheese, covered, 2 minutes per side or until grill marks appear.
  3. Cut bell pepper halves into 1-inch pieces. Divide orzo, vegetables, cheese, and basil among 6 serving bowls; drizzle with balsamic glaze.
