Ingredients

  • ½ lb peeled and deveined, large raw shrimp
  • ½ cup shredded carrots
  • ½ (8-oz) pkg snow peas
  • 1 red bell pepper, sliced
  • ⅓ cup orange sauce

Instructions

  1. Sprinkle shrimp with salt and pepper, if desired. Cook shrimp in a large nonstick skillet coated with cooking spray over medium-high heat 3 minutes. Remove shrimp, and keep warm.
  2. Add carrots, snow peas, and bell pepper to skillet; cook 5 minutes or until tender. Add sauce and shrimp; cook 2 minutes or until thoroughly heated, stirring to coat. Serve over rice.
