Chicken and Sausage Jambalaya
Garlic BreadIngredients
- 1 (14-oz) pkg andouille sausage links, sliced
- 1 lb chicken tenderloins, cut into 1-inch pieces
- 1 cup chopped onion
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 2 cups water
- 1 (10-oz) can diced tomatoes with green chiles
- 1 (8-oz) pkg jambalaya rice mix
- 3 green onions, chopped
Instructions
- Cook sausage, chicken, onion, bell pepper, and garlic in hot oil in a large Dutch oven over medium heat, stirring occasionally, until chicken is done and vegetables are just tender.
- Stir in water, tomatoes, and jambalaya mix. Bring to a boil; cover, reduce heat, and simmer 20 to 25 minutes or until rice is tender.
- Remove from heat, and let stand 5 minutes before serving. Sprinkle with green onions.
