Chicken and Sausage Jambalaya

Ingredients

  • 1 (14-oz) pkg andouille sausage links, sliced
  • 1 lb chicken tenderloins, cut into 1-inch pieces
  • 1 cup chopped onion
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 2 cups water
  • 1 (10-oz) can diced tomatoes with green chiles
  • 1 (8-oz) pkg jambalaya rice mix
  • 3 green onions, chopped

Instructions

  1. Cook sausage, chicken, onion, bell pepper, and garlic in hot oil in a large Dutch oven over medium heat, stirring occasionally, until chicken is done and vegetables are just tender.
  2. Stir in water, tomatoes, and jambalaya mix. Bring to a boil; cover, reduce heat, and simmer 20 to 25 minutes or until rice is tender.
  3. Remove from heat, and let stand 5 minutes before serving. Sprinkle with green onions.
