Korean Beef Tacos
Honey-Lime PineappleIngredients
- 1½ lb lean ground beef
- 2 (7-oz) pouches Korean stir-fry simmer sauce
- 12 soft taco-size flour tortillas
- ½ cup kimchi
- ¼ cup roasted, salted peanuts, coarsely chopped
- ¼ cup chopped fresh cilantro
- 3 Tbsp Sriracha mayonnaise (see Note)
- 1 lime, cut into wedges
Instructions
- Cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet. Add simmer sauce; cook 3 to 4 minutes or until thoroughly heated.
- Meanwhile, heat tortillas according to package directions.
- Fill tortillas with beef and kimchi. Sprinkle with nuts and cilantro. Serve with mayonnaise and lime wedges.

- 2 (16-oz) containers cubed pineapple
- ¼ cup chopped fresh cilantro
- 2 Tbsp honey
- 2 Tbsp lime juice
Side Dish Instructions
- Toss together all ingredients in a bowl.
