Korean Beef Tacos

Ingredients

  • 1½ lb lean ground beef
  • 2 (7-oz) pouches Korean stir-fry simmer sauce
  • 12 soft taco-size flour tortillas
  • ½ cup kimchi
  • ¼ cup roasted, salted peanuts, coarsely chopped
  • ¼ cup chopped fresh cilantro
  • 3 Tbsp Sriracha mayonnaise (see Note)
  • 1 lime, cut into wedges

Instructions

  1. Cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet. Add simmer sauce; cook 3 to 4 minutes or until thoroughly heated.
  2. Meanwhile, heat tortillas according to package directions.
  3. Fill tortillas with beef and kimchi. Sprinkle with nuts and cilantro. Serve with mayonnaise and lime wedges.

  • 2 (16-oz) containers cubed pineapple
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp honey
  • 2 Tbsp lime juice

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
