Mushroom Muffalettas

Mixed Apple Slices

Ingredients

  • 4 large portobello mushroom caps, sliced
  • 1 Tbsp olive oil
  • 9 slices low-sodium Provolone cheese
  • 1 cup drained, roasted red pepper slices
  • 1 cup Italian olive salad (see Note)
  • 6 Ciabatta rolls, split

Instructions

  1. Cook mushrooms in hot oil in a large nonstick skillet over medium heat 5 to 7 minutes or until tender.
  2. Cut 3 slices of cheese in half. Layer mushrooms, roasted pepper, 1½ cheese slices, and olive salad on each sandwich.

  • 1 (32-oz) pkg mixed apple slices

Side Dish Instructions

  1. Serve apples on each plate.
