Mushroom Muffalettas
Mixed Apple SlicesIngredients
- 4 large portobello mushroom caps, sliced
- 1 Tbsp olive oil
- 9 slices low-sodium Provolone cheese
- 1 cup drained, roasted red pepper slices
- 1 cup Italian olive salad (see Note)
- 6 Ciabatta rolls, split
Instructions
- Cook mushrooms in hot oil in a large nonstick skillet over medium heat 5 to 7 minutes or until tender.
- Cut 3 slices of cheese in half. Layer mushrooms, roasted pepper, 1½ cheese slices, and olive salad on each sandwich.

- 1 (32-oz) pkg mixed apple slices
Side Dish Instructions
- Serve apples on each plate.
