Orzo and Chicken Dinner

Ingredients

  • 1½ cups orzo
  • 6 Tbsp lemon juice
  • 3 Tbsp extra virgin olive oil
  • 1 tsp salt
  • 1 tsp honey
  • ½ tsp pepper
  • 3 cups shredded rotisserie chicken (or use 3 cups canned chicken breast)
  • 1 English cucumber, chopped
  • 1 large red bell pepper, chopped
  • 3 green onions, chopped
  • 2 to 3 Tbsp chopped fresh dill
  • 1 cup coarsely crumbled feta cheese

Instructions

  1. Cook orzo according to package directions. Drain and rinse with cold water.
  2. Combine lemon juice, oil, salt, honey, and pepper in a large bowl. Add orzo; toss.
  3. Add chicken, cucumber, bell pepper, onions and dill; toss. Season again with additional salt and pepper, if desired. Sprinkle with cheese.

Side Dish Ingredients

  • 1 (7-oz) pkg sea salt pita chips
  • 1 (10-oz) container hummus

Side Dish Instructions

  1. Serve pita chips and hummus on each plate.
