Orzo and Chicken Dinner
Pita Chips and HummusIngredients
- 1½ cups orzo
- 6 Tbsp lemon juice
- 3 Tbsp extra virgin olive oil
- 1 tsp salt
- 1 tsp honey
- ½ tsp pepper
- 3 cups shredded rotisserie chicken (or use 3 cups canned chicken breast)
- 1 English cucumber, chopped
- 1 large red bell pepper, chopped
- 3 green onions, chopped
- 2 to 3 Tbsp chopped fresh dill
- 1 cup coarsely crumbled feta cheese
Instructions
- Cook orzo according to package directions. Drain and rinse with cold water.
- Combine lemon juice, oil, salt, honey, and pepper in a large bowl. Add orzo; toss.
- Add chicken, cucumber, bell pepper, onions and dill; toss. Season again with additional salt and pepper, if desired. Sprinkle with cheese.

- 1 (7-oz) pkg sea salt pita chips
- 1 (10-oz) container hummus
Side Dish Instructions
- Serve pita chips and hummus on each plate.
