Ingredients

  • 3 cups rotini pasta
  • 1¼ lb ground beef
  • 1 (1-oz) envelope taco seasoning mix
  • 1 (16-oz) jar salsa
  • 1 (10.5-oz) can cream of chicken soup
  • 2 cups shredded Mexican-blend cheese
  • Fresh parsley or cilantro

Instructions

  1. Preheat oven to 375°F. Cook pasta according to package directions; drain.
  2. Meanwhile, cook beef over medium-high heat until browned and crumbly. Drain and return to skillet. Stir in taco seasoning; cook 1 minute. Stir in salsa, soup, and 1 cup cheese. Stir in hot cooked pasta.
  3. Spoon into a greased baking dish. Sprinkle with 1 cup cheese. Bake 10 to 15 minutes or until thoroughly heated. Sprinkle with fresh herbs.

  • 1 (11-oz) pkg tortilla chips
  • 1 (8-oz) container guacamole

Side Dish Instructions

  1. Serve chips and guacamole on each plate.
