Caramelized Onion and Goat Cheese Pizzas

Ingredients

  • 3 large sweet onions, thinly sliced
  • 4 Tbsp olive oil, divided
  • 2 Tbsp balsamic vinegar
  • 6 (10-inch) burrito-size flour tortillas
  • 1 (8-oz) log goat cheese, softened
  • ¼ cup whole milk (or use heavy cream)
  • 1 (5-oz) pkg baby arugula

Instructions

  1. Preheat oven to 475°F. Cook onions, covered, in 2 Tbsp hot oil in a large nonstick skillet over medium heat 5 minutes or until onions are almost tender; uncover and stir in vinegar. Season lightly with salt and pepper.
  2. Cook over medium-high heat 5 minutes, stirring often, until onions are browned and tender.
  3. Arrange tortillas on greased baking sheets.
  4. Mash goat cheese and milk in a bowl using a wooden spoon until blended and smooth; spread on tortillas. Top with caramelized onions.
  5. Bake pizzas 6 minutes or until crisp; drizzle pizzas with 2 Tbsp oil, and season with desired amount of salt and pepper. Top with arugula.
