Cheesy Bacon-Baked Chicken

Roasted Potato Wedges and Steamed Peas

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 1 Tbsp barbecue seasoning
  • 4 slices bacon
  • ½ cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 400°F. Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Rub chicken with seasoning; wrap each piece of chicken with 2 slices bacon. Place chicken on a lightly greased wire rack on a foil-lined rimmed baking sheet.
  3. Bake 20 to 25 minutes or until chicken is done and bacon is crisp. Sprinkle with cheese; bake 5 minutes longer or until cheese is melted.

  • ½ (24-oz) pkg frozen potato wedges
  • ½ (12-oz) pkg frozen green peas

Side Dish Instructions

  1. Cook potatoes according to package directions.
  2. Steam peas according to package directions; season with salt and pepper to taste.
