Bow-Tie Bolognese

Ingredients

  • 1 lb plant-based ground beef
  • 1½ Tbsp minced garlic
  • 1 Tbsp olive oil
  • 1 (14.5-oz) can diced tomatoes with Italian seasonings
  • 1 (8-oz) can no-salt-added tomato sauce
  • 1 Tbsp Italian seasoning
  • ½ tsp crushed red pepper
  • 2 cups hot water
  • 8 oz bow-tie pasta
  • 1 cup shredded part-skim mozzarella cheese
  • ½ cup shredded Parmesan cheese
  • Fresh parsley sprigs (optional)

Instructions

  1. Cook plant-based beef and garlic in hot oil in a large sauté pan or Dutch oven over medium heat until browned and crumbly. Drain, if necessary, and return to pan.
  2. Add diced tomatoes, sauce, seasoning, and crushed red pepper. Season with salt and pepper. Add water and pasta.
  3. Bring to a boil; cover, reduce heat, and simmer 15 minutes or until pasta is done. Sprinkle with cheeses. Garnish with parsley, if desired.
