Bow-Tie Bolognese
Ingredients
- 1 lb plant-based ground beef
- 1½ Tbsp minced garlic
- 1 Tbsp olive oil
- 1 (14.5-oz) can diced tomatoes with Italian seasonings
- 1 (8-oz) can no-salt-added tomato sauce
- 1 Tbsp Italian seasoning
- ½ tsp crushed red pepper
- 2 cups hot water
- 8 oz bow-tie pasta
- 1 cup shredded part-skim mozzarella cheese
- ½ cup shredded Parmesan cheese
- Fresh parsley sprigs (optional)
Instructions
- Cook plant-based beef and garlic in hot oil in a large sauté pan or Dutch oven over medium heat until browned and crumbly. Drain, if necessary, and return to pan.
- Add diced tomatoes, sauce, seasoning, and crushed red pepper. Season with salt and pepper. Add water and pasta.
- Bring to a boil; cover, reduce heat, and simmer 15 minutes or until pasta is done. Sprinkle with cheeses. Garnish with parsley, if desired.
