Sweet-and-Sour Pork

Ingredients
- 2½ Tbsp low-sodium soy sauce
- 1 Tbsp honey
- 1½ tsp Sriracha hot sauce (optional)
- 1½ tsp grated ginger
- 1 clove garlic, minced
- ¾ lb boneless pork loin chops, cut into 1-inch chunks
- 1 red bell pepper, cut into 1-inch pieces
- 1 cup cubed pineapple
- 2 small green onions, cut into 1-inch pieces
- 1½ tsp cornstarch
- 1 Tbsp water
Instructions
- Whisk together soy sauce, honey, if desired, Sriracha, ginger, and garlic.
- Place pork in a large zip-top plastic bag. Pour marinade over pork; seal and chill 30 minutes to 2 hours.
- Cook pork and marinade in a large nonstick skillet over medium-high heat 6 minutes or until pork is done. Add bell pepper; cook 5 minutes. Add pineapple and onions.
- Whisk together cornstarch and water. Add to pork mixture; cook 2 minutes or until sauce is thickened. Serve over Easy Cauli-Rice recipe.

- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook cauliflower according to package directions. Stir in salt and pepper.
