Sweet-and-Sour Pork

Ingredients

  • 2½ Tbsp low-sodium soy sauce
  • 1 Tbsp honey
  • 1½ tsp Sriracha hot sauce (optional)
  • 1½ tsp grated ginger
  • 1 clove garlic, minced
  • ¾ lb boneless pork loin chops, cut into 1-inch chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 cup cubed pineapple
  • 2 small green onions, cut into 1-inch pieces
  • 1½ tsp cornstarch
  • 1 Tbsp water

Instructions

  1. Whisk together soy sauce, honey, if desired, Sriracha, ginger, and garlic.
  2. Place pork in a large zip-top plastic bag. Pour marinade over pork; seal and chill 30 minutes to 2 hours.
  3. Cook pork and marinade in a large nonstick skillet over medium-high heat 6 minutes or until pork is done. Add bell pepper; cook 5 minutes. Add pineapple and onions.
  4. Whisk together cornstarch and water. Add to pork mixture; cook 2 minutes or until sauce is thickened. Serve over Easy Cauli-Rice recipe.

  • 1 (10-oz) pkg frozen riced cauliflower 
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook cauliflower according to package directions. Stir in salt and pepper.
