Garlic-Thyme Salmon
Mashed Cauliflower with SpinachIngredients
- ¾ lb salmon fillets
- ½ tsp garlic salt
- 2 tsp olive oil
- 2 tsp butter
- 1 tsp chopped fresh thyme (or use ¼ tsp dried)
Instructions
- Preheat oven to 350°F. Rub salmon with garlic salt.
- Heat oil and butter in a cast-iron or ovenproof skillet over medium-high heat; add salmon.
- Cook 3 to 4 minutes per side, basting salmon with butter and oil. Transfer skillet to oven.
- Bake 5 to 7 minutes or until fish flakes with a fork. Sprinkle with thyme.
Side Dish Ingredients
- 3 cups cauliflower florets
- 1 small clove garlic, halved
- 1½ Tbsp butter, cut into pieces
- 3 Tbsp heavy cream
- ⅛ tsp salt
- 1 cup coarsely chopped spinach
Side Dish Instructions
- Cook cauliflower and garlic in boiling water to cover 10 minutes or until very tender. Drain well. Return cauliflower and garlic to pot over low heat. Add butter, cream, and salt. Cook 1 minute; remove from heat.
- Mash with a potato masher until desired consistency. Stir in spinach.
