Ingredients

  • 2 boneless skinless chicken breasts
  • ½ tsp salt
  • ½ tsp cracked black pepper
  • 2 heads romaine lettuce
  • ½ cup croutons
  • ½ cup grated Parmesan cheese
  • 1 Tbsp chopped chives
  • 1 lemon, cut into wedges
  • Caesar Dressing:
  • 2 garlic cloves, chopped
  • 2 Tbsp freshly squeezed lemon juice
  • 1 Tbsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • 1 cup mayonnaise
  • ⅓ cup olive oil
  • ½ cup grated Parmesan cheese
  • 1 tsp anchovy paste
  • 1 tsp cracked black pepper

Instructions

  1. Place a grill pan over medium-high heat.
  2. Sprinkle the chicken breasts evenly with the salt and pepper. Place the chicken in the pan. Grill for 4 to 5 minutes per side, or until the internal temperature reaches 165˚F when measured with an instant-read thermometer.
  3. Let cool completely. Slice each breast into 6 pieces.
  4. Arrange the romaine lettuce on a platter.
  5. Top with the croutons and sliced chicken. Sprinkle with Parmesan cheese and chives.
  6. Drizzle with the dressing, serving any extra on the side with the lemon wedges. Serve immediately.
  7. For Dressing: In a medium bowl, whisk the garlic, lemon juice, mustard, and Worcestershire sauce until smooth. Whisk in the mayonnaise, olive oil, Parmesan cheese, anchovy paste, and pepper. Set aside.
