Spinach, Sweet Potato, and Lentil Curry

Ingredients

  • 2 cups lentils
  • 1 cup chopped onion
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tsp curry powder
  • 1 tsp ground cumin
  • 3 sweet potatoes, peeled and cut into small cubes
  • 2 cups water
  • 1 (10-oz) pkg baby spinach
  • 1 (5.3-oz) carton vegan unsweetened dairy-free yogurt

Instructions

  1. Cook lentils according to package directions; drain.
  2. Meanwhile, sauté onion in hot oil in a large skillet over medium heat 5 minutes or until slightly browned. Add garlic, curry powder, and cumin; stir 1 minute. Add potatoes, lentils, and water.
  3. Bring to a boil. Reduce heat, cover, and simmer 8 minutes or until potatoes are tender. Stir in spinach; cook 4 minutes. Top each serving with yogurt.

  • 6 vegan whole-wheat pitas

Side Dish Instructions

  1. Wrap pitas in a moist paper towel. Microwave at High 20 seconds.
