Spinach, Sweet Potato, and Lentil Curry
Warmed Whole-Wheat Pita RoundsIngredients
- 2 cups lentils
- 1 cup chopped onion
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- 2 tsp curry powder
- 1 tsp ground cumin
- 3 sweet potatoes, peeled and cut into small cubes
- 2 cups water
- 1 (10-oz) pkg baby spinach
- 1 (5.3-oz) carton vegan unsweetened dairy-free yogurt
Instructions
- Cook lentils according to package directions; drain.
- Meanwhile, sauté onion in hot oil in a large skillet over medium heat 5 minutes or until slightly browned. Add garlic, curry powder, and cumin; stir 1 minute. Add potatoes, lentils, and water.
- Bring to a boil. Reduce heat, cover, and simmer 8 minutes or until potatoes are tender. Stir in spinach; cook 4 minutes. Top each serving with yogurt.

- Wrap pitas in a moist paper towel. Microwave at High 20 seconds.
