Tex-Mex French Bread Pizzas

Ingredients
- ½ lb ground beef
- ½ (10-oz) can green enchilada sauce
- 1 cup frozen corn
- 1 tsp ground cumin
- ½ (14.8-oz) loaf Italian bread, halved lengthwise
- 1 (8-oz) pkg shredded Mexican-blend cheese
- ¼ cup sour cream (optional)
- ½ (8-oz) container guacamole (optional)
Instructions
- Preheat oven to 400°F. Cook beef in a large skillet over medium heat until browned and crumbly; drain, and return to skillet.
- Add enchilada sauce, corn, and cumin; cook over medium heat, stirring occasionally, 5 minutes.
- Place bread, cut sides up on a baking sheet. Sprinkle each with ½ cup cheese. Top each with beef mixture, and sprinkle with remaining cheese.
- Bake 15 to 20 minutes or until bread is crisp and cheese is melted. Serve with sour cream and guacamole for dipping.
