Crispy Shrimp Salad
Ingredients
- 1 (9.2-oz) pkg frozen butterfly shrimp
- 1 head romaine lettuce, chopped
- 1 pint grape tomatoes, halved
- ¾ cup freshly shredded-reduced fat Cheddar cheese
- ⅓ cup real bacon bits
- ½ cup refrigerated yogurt Ranch dressing
- 2 Tbsp chopped fresh chives
Instructions
- Bake shrimp according to package directions.
- Toss together lettuce, tomatoes, cheese, bacon, and dressing in a large bowl; divide among 4 serving plates (see Note).
- Serve shrimp over salad; sprinkle with chives.
