Crispy Shrimp Salad

Ingredients

  • 1 (9.2-oz) pkg frozen butterfly shrimp
  • 1 head romaine lettuce, chopped
  • 1 pint grape tomatoes, halved
  • ¾ cup freshly shredded-reduced fat Cheddar cheese
  • ⅓ cup real bacon bits
  • ½ cup refrigerated yogurt Ranch dressing
  • 2 Tbsp chopped fresh chives

Instructions

  1. Bake shrimp according to package directions.
  2. Toss together lettuce, tomatoes, cheese, bacon, and dressing in a large bowl; divide among 4 serving plates (see Note).
  3.  Serve shrimp over salad; sprinkle with chives.
