Broiled Rib-Eye Steaks
Sautéed Pepperoni and SpinachIngredients
- 1 large lime
- 1 large lemon
- 2 large cloves garlic, minced
- 6 (8-oz) boneless rib-eye steaks (see Note)
- 2 Tbsp Montreal steak seasoning
- 1 tsp salt
- 1 tsp pepper
Instructions
- Grate zest and squeeze juice from lime and lemon. Combine garlic and citrus zest and juice in a large zip-top plastic bag. Add steaks; seal and turn to coat. Chill 4 hours or overnight.
- Preheat broiler. Remove steaks from bag; discard marinade. Sprinkle steaks with seasoning, salt, and pepper. Place on a greased rack in a broiler pan.
- Broil 6 minutes per side or to desired doneness. Let stand 5 minutes before serving.
Side Dish Ingredients
- 1 Tbsp coconut oil
- ½ (5-oz) pkg uncured pepperoni, chopped
- 2 cloves garlic, minced
- 1 (10-oz) pkg spinach
- 2 Tbsp apple cider vinegar
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Melt oil in a large nonstick skillet over medium-high heat. Add pepperoni and garlic; sauté 1 minute or until fragrant.
- Add spinach, vinegar, salt, and pepper; cook 3 to 5 minutes or until spinach is wilted and liquid is almost evaporated.
