Broiled Rib-Eye Steaks

Ingredients

  • 1 large lime
  • 1 large lemon
  • 2 large cloves garlic, minced
  • 6 (8-oz) boneless rib-eye steaks (see Note)
  • 2 Tbsp Montreal steak seasoning
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Grate zest and squeeze juice from lime and lemon. Combine garlic and citrus zest and juice in a large zip-top plastic bag. Add steaks; seal and turn to coat. Chill 4 hours or overnight.
  2. Preheat broiler. Remove steaks from bag; discard marinade. Sprinkle steaks with seasoning, salt, and pepper. Place on a greased rack in a broiler pan.
  3. Broil 6 minutes per side or to desired doneness. Let stand 5 minutes before serving.

Side Dish Ingredients

  • 1 Tbsp coconut oil
  • ½ (5-oz) pkg uncured pepperoni, chopped
  • 2 cloves garlic, minced
  • 1 (10-oz) pkg spinach
  • 2 Tbsp apple cider vinegar
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Melt oil in a large nonstick skillet over medium-high heat. Add pepperoni and garlic; sauté 1 minute or until fragrant.
  2. Add spinach, vinegar, salt, and pepper; cook 3 to 5 minutes or until spinach is wilted and liquid is almost evaporated.
