Whole Wheat Zucchini Bread

Ingredients

  • ⅔ cup whole wheat flour
  • ⅔ cup all-purpose flour
  • ½ cup packed brown sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 cup grated zucchini
  • 3 Tbsp olive oil
  • 2 Tbsp butter, melted
  • 2 Tbsp 2% reduced-fat milk
  • ½ tsp vanilla extract
  • 1 large egg, lightly beaten
  • Mini chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F. Whisk together both flours, sugar, baking powder, cinnamon, and salt in a bowl.
  2. Press zucchini between paper towels to remove excess moisture.
  3. Whisk together zucchini, oil, butter, milk, vanilla, and egg in a bowl. Add to flour mixture, stirring just until blended. If desired, gently fold chocolate chips into batter.
  4. Pour batter into an 8- x 4-inch loaf pan coated with cooking spray. Bake 45 to 55 minutes or until a wooden pick inserted into center comes out clean. Cool in pan 10 minutes. Remove from pan. Cool completely on a wire rack.

  • 1 (16-oz) carton fat-free plain Greek yogurt
  • 1 Tbsp honey
  • ½ tsp vanilla extract
  • 1 cup sliced strawberries

Side Dish Instructions

  1. Combine yogurt, honey, and vanilla. Top with berries.
