Whole Wheat Zucchini Bread
Honey-Vanilla Yogurt with Fresh Strawberries
Ingredients
- ⅔ cup whole wheat flour
- ⅔ cup all-purpose flour
- ½ cup packed brown sugar
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp salt
- 1 cup grated zucchini
- 3 Tbsp olive oil
- 2 Tbsp butter, melted
- 2 Tbsp 2% reduced-fat milk
- ½ tsp vanilla extract
- 1 large egg, lightly beaten
- Mini chocolate chips (optional)
Instructions
- Preheat oven to 350°F. Whisk together both flours, sugar, baking powder, cinnamon, and salt in a bowl.
- Press zucchini between paper towels to remove excess moisture.
- Whisk together zucchini, oil, butter, milk, vanilla, and egg in a bowl. Add to flour mixture, stirring just until blended. If desired, gently fold chocolate chips into batter.
- Pour batter into an 8- x 4-inch loaf pan coated with cooking spray. Bake 45 to 55 minutes or until a wooden pick inserted into center comes out clean. Cool in pan 10 minutes. Remove from pan. Cool completely on a wire rack.

- 1 (16-oz) carton fat-free plain Greek yogurt
- 1 Tbsp honey
- ½ tsp vanilla extract
- 1 cup sliced strawberries
Side Dish Instructions
- Combine yogurt, honey, and vanilla. Top with berries.
