Monster Cookie Granola Bars

Ingredients
- ½ cup honey
- ½ cup creamy peanut butter
- ⅓ cup coconut oil
- ½ cup packed brown sugar
- 1 tsp vanilla extract
- 2½ cups toasted rice cereal
- 1 cup old-fashioned oats
- ½ cup miniature candy-coated chocolate pieces
- ½ cup plus 2 Tbsp miniature chocolate chips
- ¼ cup almonds, chopped
- ½ tsp sea salt
Instructions
- Line a 9-inch baking dish with parchment paper, allowing 2 inches to extend over sides of dish. Spray bottom and sides with cooking spray.
- Combine honey, peanut butter, and oil in a microwave-safe bowl. Microwave at HIGH 1 minute. Stir in brown sugar until smooth. Stir in vanilla.
- Combine cereal, oats, chocolate candy, ½ cup chocolate chips, and nuts in a large bowl; fold in honey mixture. Stir gently. Pour mixture into prepared dish; press into bottom using back of a greased measuring cup or hands.
- Chill 2 hours. Remove from pan, and cut into small bars. Place 2 Tbsp chocolate chips in a microwave-safe bowl; heat in 30-second intervals until melted.
- Drizzle bars with chocolate; sprinkle with salt. Makes 12 servings.
