Crispy Shrimp and Creamed-Corn Grits

Ingredients

  • 2 (14-oz) pkg frozen popcorn shrimp 
  • 1 (32-oz) carton chicken broth
  • 1½ cups quick-cooking grits
  • 1 (20-oz) roll frozen creamed corn, thawed
  • 1 (8-oz) pkg shredded Cheddar cheese
  • ½ cup butter
  • 1 Tbsp Cajun seasoning

Instructions

  1. Bake or fry shrimp according to package directions.
  2. Meanwhile, bring broth to a simmer in a large saucepan over medium-low heat. Gradually stir in grits, and cook, stirring occasionally, until mixture is thickened.
  3. Stir in creamed corn; cook 5 minutes. Stir in cheese until melted; cover, and keep warm.
  4. Melt butter in a large microwave-safe dish; add seasoning, and stir until blended. Add shrimp; toss.
  5. Divide grits among 6 shallow bowls; top with buttery shrimp.
