Grilled Flank Steak Tacos

Ingredients

  • 1½ lb flank steak
  • ¼ cup olive oil
  • 1 (12.5-oz) box soft-taco dinner kit
  • 3 Tbsp lime juice
  • 1 (8-oz) pkg shredded Mexican-blend cheese

Instructions

  1. Combine flank steak, oil, seasoning packet (from kit), and lime juice in a zip-top plastic bag. Seal bag, and refrigerate at least 4 hours or up to 1 day.
  2. Preheat grill or grill pan to medium-high heat. Remove steak from marinade, discarding marinade.
  3. Grill steak, covered, 5 to 6 minutes per side to desired doneness. Let stand 10 minutes; thinly slice across the grain.
  4. Warm tortillas (from kit) according to package directions. Serve steak and cheese in warm tortillas with sauce (from kit), if desired.

Side Dish Ingredients

  • 2 (6-oz) pkg cilantro-lime rice mixes (such as Rice-a-Roni)
  • 3 oranges, sectioned

Side Dish Instructions

  1. Prepare rice according to package directions.
  2. Serve orange sections alongside tacos.
