Citrus Chicken
Garlic and Pecan Green Beans
Ingredients
- 2 oranges
- 1 lemon
- 1 lime
- ¼ cup olive oil
- 2 cloves garlic, minced
- 1 boneless, skinless chicken breast, halved
- ¼ tsp salt
- ⅛ tsp pepper
Instructions
- Grate zest from oranges, lemon, and lime into a large bowl; squeeze juice from oranges, and add to bowl.
- Add oil, garlic, and chicken; chill at least 30 minutes.
- Heat a grill pan or cast-iron skillet over medium-high heat. Remove chicken from marinade, reserving marinade.
- Sprinkle chicken with salt and pepper; cook 6 minutes per side or until done.
- Bring marinade to a boil in a saucepan; boil 3 minutes. Drizzle over chicken.
Side Dish Ingredients
- ½ lb green beans, trimmed
- 2 Tbsp chopped pecans
- 1 clove garlic, minced
- 1 Tbsp butter
- ¼ tsp salt
Side Dish Instructions
- Steam green beans in a steamer basket over simmering water 5 minutes or until crisp-tender.
- Cook nuts and garlic in butter in a small skillet over medium heat until toasted and fragrant. Remove from heat.
- Place green beans in a bowl; toss with salt, and sprinkle with nuts.
