Citrus Chicken

Garlic and Pecan Green Beans

Ingredients

  • 2 oranges
  • 1 lemon
  • 1 lime
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 1 boneless, skinless chicken breast, halved
  • ¼ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Grate zest from oranges, lemon, and lime into a large bowl; squeeze juice from oranges, and add to bowl.
  2. Add oil, garlic, and chicken; chill at least 30 minutes.
  3. Heat a grill pan or cast-iron skillet over medium-high heat. Remove chicken from marinade, reserving marinade.
  4. Sprinkle chicken with salt and pepper; cook 6 minutes per side or until done.
  5. Bring marinade to a boil in a saucepan; boil 3 minutes. Drizzle over chicken.

Side Dish Ingredients

  • ½ lb green beans, trimmed
  • 2 Tbsp chopped pecans
  • 1 clove garlic, minced
  • 1 Tbsp butter
  • ¼ tsp salt

Side Dish Instructions

  1. Steam green beans in a steamer basket over simmering water 5 minutes or until crisp-tender.
  2. Cook nuts and garlic in butter in a small skillet over medium heat until toasted and fragrant. Remove from heat.
  3. Place green beans in a bowl; toss with salt, and sprinkle with nuts.
