Ingredients

  • ¾ lb ground beef (or use ground turkey)
  • 1 Tbsp minced garlic
  • 1 Tbsp rice wine vinegar
  • 1 Tbsp honey
  • 1 Tbsp soy sauce
  • ½ tsp ground ginger
  • ¼ tsp crushed red pepper
  • ½ English cucumber, thinly sliced
  • ½ (10-oz) pkg shredded carrots
  • 2 green onions, chopped
  • 1 Tbsp toasted sesame seeds

Instructions

  1. Cook beef and garlic in a large nonstick skillet 8 to 10 minutes.
  2. Combine vinegar, honey, soy sauce, ginger, and red pepper; add to skillet. Cook 2 minutes.
  3. Serve beef mixture over Broccoli Rice recipe; top with cucumber, desired amount of carrots, and onions; sprinkle with sesame seeds.

Side Dish Ingredients

  • 1 (10-oz) pkg frozen riced broccoli (see Note)
  • 1 Tbsp dark sesame oil
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook riced broccoli according to package directions; toss with oil, salt, and pepper in a bowl.
