Fresh Mozzarella Margherita Pizza

Ingredients

  • ½ Tbsp minced garlic
  • ¼ tsp crushed red pepper
  • 1½ Tbsp olive oil
  • 1 (12-inch) prebaked pizza crust
  • 1 (8-oz) ball fresh mozzarella cheese, thinly sliced
  • 2 Roma tomatoes, thinly sliced
  • ⅓ cup thinly sliced red onion
  • 2 Tbsp torn fresh basil

Instructions

  1. Preheat oven to 450°F. Cook garlic and red pepper in hot oil in a skillet over medium heat 1 minute or until fragrant.
  2. Brush crust with flavored oil; top with cheese, tomatoes, and onion.
  3. Bake directly on oven rack 12 to 15 minutes or until crust is golden. Top with basil.

Side Dish Ingredients

  • 1 head radicchio
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp vegetarian balsamic vinegar

Side Dish Instructions

  1. Preheat grill pan to medium-high heat. Remove outside leaves of radicchio; discard. Quarter radicchio; brush cut sides with oil, and sprinkle with salt and pepper.
  2. Grill, covered, 4 to 6 minutes per side or until slightly charred. Drizzle with vinegar.
