Bow-Tie Bolognese

Ingredients

  • 2 fresh plant-based burger patties
  • ¾ tsp minced garlic
  • ½ Tbsp olive oil
  • ½ (14.5-oz) can diced tomatoes with Italian seasonings
  • ½ (8-oz) can tomato sauce
  • ½ Tbsp Italian seasoning
  • ¼ tsp crushed red pepper
  • 1 cup hot water
  • 4 oz bow-tie pasta (about 1 cup)
  • ½ cup shredded part-skim mozzarella cheese
  • ¼ cup shredded Parmesan cheese
  • Fresh parsley sprigs (optional)

Instructions

  1. Crumble plant-based patties into a Dutch oven. Add garlic and oil; cook over medium-high heat until browned and crumbly. Drain, if necessary, and return to pan.
  2. Add diced tomatoes, sauce, seasoning, and crushed red pepper.
  3. Add water and pasta. Bring to a boil; cover, reduce heat, and simmer 15 minutes or until pasta is done. Sprinkle with both cheeses. Garnish with parsley, if desired.
