Bow-Tie Bolognese

Ingredients
- 2 fresh plant-based burger patties
- ¾ tsp minced garlic
- ½ Tbsp olive oil
- ½ (14.5-oz) can diced tomatoes with Italian seasonings
- ½ (8-oz) can tomato sauce
- ½ Tbsp Italian seasoning
- ¼ tsp crushed red pepper
- 1 cup hot water
- 4 oz bow-tie pasta (about 1 cup)
- ½ cup shredded part-skim mozzarella cheese
- ¼ cup shredded Parmesan cheese
- Fresh parsley sprigs (optional)
Instructions
- Crumble plant-based patties into a Dutch oven. Add garlic and oil; cook over medium-high heat until browned and crumbly. Drain, if necessary, and return to pan.
- Add diced tomatoes, sauce, seasoning, and crushed red pepper.
- Add water and pasta. Bring to a boil; cover, reduce heat, and simmer 15 minutes or until pasta is done. Sprinkle with both cheeses. Garnish with parsley, if desired.
