Thai Shrimp Scampi

Ingredients

  • 1 (16-oz) pkg zucchini noodles
  • 1½ lb peeled and deveined, large raw shrimp
  • ½ tsp kosher salt, divided
  • 4 Tbsp olive oil, divided
  • 4 cloves garlic, minced
  • 2 tsp lemon zest
  • 1 lb asparagus, trimmed and cut into 1½-inch pieces
  • 1 (13.5-oz) can coconut milk
  • 2 Tbsp green curry paste 
  • 1 cup chopped fresh cilantro 
  • ½ cup chopped fresh mint (optional)

Instructions

  1. Sauté zucchini, shrimp, and ¼ tsp salt in 3 Tbsp hot oil in a large skillet over medium-high heat 3 minutes. Add garlic and lemon zest; sauté 30 seconds. Remove from skillet.
  2. Add asparagus and 1 Tbsp oil to same skillet; cook 2 minutes. Add milk, curry paste, and ¼ tsp salt; reduce heat, and simmer 5 minutes.
  3. Return zucchini and shrimp to skillet; cook 3 minutes or until shrimp turn pink. Stir in cilantro and, if desired, mint.
