Ingredients

  • 3 (8-oz) boneless, skinless chicken breasts
  • ⅓ cup olive-oil mayonnaise
  • 1 Tbsp Greek seasoning, divided
  • 1 Tbsp chopped fresh oregano
  • 2 lb red potatoes, cut into wedges
  • ¼ cup olive oil vinaigrette
  • ½ cup freshly grated Parmesan cheese
  • ¾ cup tzatziki sauce

Instructions

  1. Preheat oven to 425°F. Place a large rimmed baking sheet in oven while preheating.
  2. Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Combine mayonnaise, 1 tsp Greek seasoning, and oregano; brush over chicken.
  3. Toss together potatoes, vinaigrette, and 2 tsp Greek seasoning. Carefully arrange chicken and potatoes on hot pan. Bake 20 to 30 minutes or until chicken is done and potatoes are browned and tender.
  4. Serve chicken and potatoes with tzatziki sauce.
