Ingredients
- 3 (8-oz) boneless, skinless chicken breasts
- ⅓ cup olive-oil mayonnaise
- 1 Tbsp Greek seasoning, divided
- 1 Tbsp chopped fresh oregano
- 2 lb red potatoes, cut into wedges
- ¼ cup olive oil vinaigrette
- ½ cup freshly grated Parmesan cheese
- ¾ cup tzatziki sauce
Instructions
- Preheat oven to 425°F. Place a large rimmed baking sheet in oven while preheating.
- Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Combine mayonnaise, 1 tsp Greek seasoning, and oregano; brush over chicken.
- Toss together potatoes, vinaigrette, and 2 tsp Greek seasoning. Carefully arrange chicken and potatoes on hot pan. Bake 20 to 30 minutes or until chicken is done and potatoes are browned and tender.
- Serve chicken and potatoes with tzatziki sauce.
