Crispy Fish with Lemon-Butter Sauce

Ingredients

  • 18 frozen breaded fish fillets
  • ½ cup chicken broth
  • 4 Tbsp lemon juice
  • ¼ cup heavy cream
  • 3 Tbsp cold butter, cut into cubes
  • 1 tsp minced fresh thyme

Instructions

  1. Cook fish according to package directions.
  2. Meanwhile, cook broth and lemon juice in a large skillet over medium-high heat until reduced by half. Add cream, and cook 3 minutes or until sauce is slightly thickened. Remove from heat, and whisk in cold butter until melted. Stir in thyme.
  3. Divide fish among 6 plates; spoon sauce over fish.

  • 2 cups long-grain white rice
  • 1 (16-oz) pkg frozen green beans

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook green beans according to package directions; season with salt and pepper to taste.
