Brown Sugar-Bacon Waffles

Ingredients

  • 1 (16-oz) pkg bacon, chopped
  • 3 cups all-purpose flour
  • 1 cup packed brown sugar
  • 1 Tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • ½ tsp ground cinnamon
  • 4 large eggs
  • 2½ cups buttermilk
  • ⅔ cup vegetable oil 
  • 1 (8-oz) bottle pancake syrup

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
  2. Meanwhile, preheat waffle maker according to manufacturer's instructions. In a large bowl, whisk flour, brown sugar, baking powder, baking soda, salt, and cinnamon until blended.
  3. Whisk eggs, buttermilk, and oil in a medium bowl until blended. Add to flour mixture, stirring until blended (there will be some lumps). Stir in half of crispy bacon.
  4. Spoon waffle batter into waffle iron according to manufacturer's instructions. Cook until browned and crisp. Divide waffles among 6 plates. Top with remaining bacon and serve with syrup.
