Brown Sugar-Bacon Waffles
Fresh Strawberries
Ingredients
- 1 (16-oz) pkg bacon, chopped
- 3 cups all-purpose flour
- 1 cup packed brown sugar
- 1 Tbsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- ½ tsp ground cinnamon
- 4 large eggs
- 2½ cups buttermilk
- ⅔ cup vegetable oil
- 1 (8-oz) bottle pancake syrup
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
- Meanwhile, preheat waffle maker according to manufacturer's instructions. In a large bowl, whisk flour, brown sugar, baking powder, baking soda, salt, and cinnamon until blended.
- Whisk eggs, buttermilk, and oil in a medium bowl until blended. Add to flour mixture, stirring until blended (there will be some lumps). Stir in half of crispy bacon.
- Spoon waffle batter into waffle iron according to manufacturer's instructions. Cook until browned and crisp. Divide waffles among 6 plates. Top with remaining bacon and serve with syrup.
