Ingredients

  • ½ lb peeled and deveined, large raw shrimp
  • ⅛ tsp salt
  • Dash of crushed red pepper
  • 1½ Tbsp olive oil, divided
  • ⅓ cup chopped fresh parsley
  • 1 Tbsp minced garlic
  • 2 tsp white wine vinegar

Instructions

  1. Sprinkle shrimp with salt and red pepper. Cook shrimp in ½ Tbsp hot oil in a large skillet over medium-high heat 3 to 4 minutes or until shrimp turn pink.
  2. Add parsley, 1 Tbsp oil, garlic, and vinegar, tossing to coat shrimp. Cook 2 minutes or until thoroughly heated.

  • 1 (12-oz) pkg green beans
  • 1½ Tbsp olive oil, divided
  • ⅛ tsp salt, divided
  • ½ lb red potatoes, cubed
  • ¼ cup freshly grated Parmesan cheese
  • ¼ tsp Italian seasoning

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together green beans, ½ Tbsp oil, and a dash of salt on a rimmed baking sheet; spread in a single layer.
  2. Bake 15 to 20 minutes or until browned and tender, stirring halfway through baking.
  3. Meanwhile, bring potatoes and water to cover to a boil in a saucepan. Cook 5 minutes or until potatoes are fork tender; drain.
  4. Cook potatoes, cheese, 1 Tbsp oil, Italian seasoning, and a dash of salt in pan until thoroughly heated, mashing potatoes with a potato masher until desired consistency.
