Herbed Shrimp
Parmesan Mashed Potatoes and Roasted Green Beans

Ingredients
- ½ lb peeled and deveined, large raw shrimp
- ⅛ tsp salt
- Dash of crushed red pepper
- 1½ Tbsp olive oil, divided
- ⅓ cup chopped fresh parsley
- 1 Tbsp minced garlic
- 2 tsp white wine vinegar
Instructions
- Sprinkle shrimp with salt and red pepper. Cook shrimp in ½ Tbsp hot oil in a large skillet over medium-high heat 3 to 4 minutes or until shrimp turn pink.
- Add parsley, 1 Tbsp oil, garlic, and vinegar, tossing to coat shrimp. Cook 2 minutes or until thoroughly heated.
Side Dish Ingredients
- 1 (12-oz) pkg green beans
- 1½ Tbsp olive oil, divided
- ⅛ tsp salt, divided
- ½ lb red potatoes, cubed
- ¼ cup freshly grated Parmesan cheese
- ¼ tsp Italian seasoning
Side Dish Instructions
- Preheat oven to 425°F. Toss together green beans, ½ Tbsp oil, and a dash of salt on a rimmed baking sheet; spread in a single layer.
- Bake 15 to 20 minutes or until browned and tender, stirring halfway through baking.
- Meanwhile, bring potatoes and water to cover to a boil in a saucepan. Cook 5 minutes or until potatoes are fork tender; drain.
- Cook potatoes, cheese, 1 Tbsp oil, Italian seasoning, and a dash of salt in pan until thoroughly heated, mashing potatoes with a potato masher until desired consistency.
