Ingredients
- ⅓ cup instant brown rice
- 2 burrito-size flour tortillas
- ½ cup refried beans
- ½ cup black beans, drained and rinsed
- ⅔ cup shredded romaine lettuce
- 1 Roma tomato, chopped
- ⅓ cup shredded Mexican-blend cheese
- ¼ cup guacamole
Instructions
- Cook rice according to package directions.
- Heat tortillas according to package directions. Spread refried beans on warm tortillas. Top with rice, black beans, lettuce, tomato, cheese, and guacamole.
- Fold in both sides of each tortilla; roll up to completely enclose filling.
