Ingredients

  • 1 cup multicolored cherry tomatoes
  • 2 cloves garlic, minced
  • 1½ Tbsp olive oil, divided
  • ½ (8-oz) block feta cheese
  • ¼ cup white wine
  • ½ (12-oz) pkg cheese tortellini
  • ¼ cup chopped fresh basil 

Instructions

  1. Preheat oven to 400°F. Combine tomatoes, garlic, and 1 Tbsp oil in a small baking dish. Arrange cheese in center of dish; drizzle with remaining ½ Tbsp oil.
  2. Drizzle cheese and tomatoes with wine. Bake 30 minutes or until cheese is softened and tomatoes begin to burst.
  3. Meanwhile, cook tortellini according to package directions. Stir baked cheese and tomatoes until creamy. Toss tortellini and basil with cheese mixture.
