Balsamic-Strawberry Chicken

Wild Rice and Green Peas with Mushrooms

Ingredients

  • 1½ lb boneless, skinless chicken breasts, halved lengthwise
  • ½ tsp salt
  • ½ tsp pepper
  • 2 cloves garlic, minced
  • 2 tsp dried rosemary
  • 2 Tbsp olive oil
  • 1 (16-oz) pkg organic strawberries, sliced
  • ¼ cup balsamic vinegar
  • 2 Tbsp honey

Instructions

  1. Sprinkle chicken with salt and pepper; rub with garlic and rosemary.
  2. Cook chicken in hot oil in a large, nonstick skillet over medium-high heat 2 to 3 minutes per side or until done; remove from skillet, and keep warm.
  3. Add strawberries, vinegar, and honey to skillet; cook 8 to 10 minutes, stirring occasionally, until sauce is slightly thickened. Serve over chicken.

  • 1½ cups long-grain, brown, and wild rice mix, rinsed
  • 2 cloves garlic, minced
  • 1 (8-oz) pkg sliced mushrooms
  • 3 Tbsp olive oil
  • 1 (16-oz) pkg frozen green peas, thawed
  • ½ cup low-sodium chicken broth
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, sauté garlic and mushrooms in hot oil in a large nonstick skillet over medium heat 8 minutes or until mushrooms are browned and tender.
  3. Add peas, broth, salt, and pepper. Cook 5 minutes or until peas are tender and liquid has evaporated.
