Grilled Halibut with Mint and Garlic
Leek and Mushroom Sauté
Ingredients
- 6 (6-oz) skinless halibut fillets
- 1 Tbsp avocado oil (or use coconut oil)
- 2 Tbsp finely chopped fresh mint
- 1 tsp minced garlic
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat grill or grill pan to medium-high heat. Rub fish with oil. Sprinkle with mint, garlic, salt, and pepper. Grill 4 minutes per side or until fish flakes with a fork.
Side Dish Ingredients
- 3 large leeks
- 1 (16-oz) pkg sliced baby portobello mushrooms
- 2 Tbsp avocado oil (or use coconut oil)
- 1 tsp minced garlic
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cut leeks in half lengthwise. Rinse well under cold water. Thinly slice white and light green parts only.
- Cook leeks and mushrooms in hot oil in a large skillet over medium heat 6 minutes or until just beginning to soften. Stir in garlic, salt, and pepper. Cook 4 minutes.
