Grilled Halibut with Mint and Garlic

Ingredients

  • 6 (6-oz) skinless halibut fillets
  • 1 Tbsp avocado oil (or use coconut oil)
  • 2 Tbsp finely chopped fresh mint
  • 1 tsp minced garlic
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat grill or grill pan to medium-high heat. Rub fish with oil. Sprinkle with mint, garlic, salt, and pepper. Grill 4 minutes per side or until fish flakes with a fork.

Side Dish Ingredients

  • 3 large leeks
  • 1 (16-oz) pkg sliced baby portobello mushrooms
  • 2 Tbsp avocado oil (or use coconut oil)
  • 1 tsp minced garlic
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cut leeks in half lengthwise. Rinse well under cold water. Thinly slice white and light green parts only.
  2. Cook leeks and mushrooms in hot oil in a large skillet over medium heat 6 minutes or until just beginning to soften. Stir in garlic, salt, and pepper. Cook 4 minutes.
