Caprese Paninis
Chilled Red GrapesIngredients
- 8 (1-oz) slices whole-grain bread
- 1 (8-oz) ball fresh mozzarella cheese, sliced
- 2 Roma tomatoes, sliced
- 1 cup fresh basil leaves
- 2 Tbsp balsamic glaze
- ½ tsp salt
- ½ tsp pepper
Instructions
- Top 4 bread slices with cheese, tomatoes, and basil; drizzle with glaze, and sprinkle with salt and pepper. Cover with remaining 4 bread slices. Lightly coat outsides sandwiches with cooking spray.
- Cook sandwiches, in batches if necessary, in a large skillet (or panini press) over medium heat, pressing sandwiches down using a heavy skillet, 2 to 3 minutes per side or until toasted.
