Chicken-Brown Rice Bowls with Fruit

Ingredients

  • 1 (8.8-oz) pouch microwavable brown rice
  • ¼ cup chopped pecans
  • 1½ cups chopped or shredded rotisserie chicken
  • 1 cup seedless red grapes, halved
  • 1 (4.4-oz) pkg blueberries
  • ½ (8-oz) block part-skim mozzarella cheese, cut into very small cubes
  • 2 cups shredded romaine lettuce
  • ¼ cup light balsamic vinaigrette

Instructions

  1. Heat rice according to package directions.
  2. Toast nuts in a dry skillet over medium heat 4 to 6 minutes or until fragrant.
  3. Divide rice among 6 bowls. Top with chicken, nuts, fruit, cheese, and lettuce. Drizzle with dressing.
