Creamy Dijon-Lime Chicken Thighs

Ingredients

  • ¾ lb boneless, skinless chicken thighs
  • 1 lime
  • 2 Tbsp Dijon mustard
  • 1 Tbsp mayonnaise
  • ¼ tsp minced garlic

Instructions

  1. Preheat oven to 400°F. Place chicken in an 8-inch baking dish coated with cooking spray. Season with salt and pepper, if desired.
  2. Grate ½ tsp zest and squeeze 1½ tsp juice from lime.
  3. Combine mustard, mayonnaise, garlic, lime juice, and zest in a small bowl. Pour over chicken. Toss.
  4. Bake 25 to 30 minutes or until chicken is done. Drizzle pan juices over chicken before serving.

  • ½ (16-oz) pkg frozen cauliflower florets
  • ¼ cup crumbled goat cheese (1 oz)
  • 3 Tbsp heavy cream
  • ¼ tsp kosher salt
  • ⅛ tsp pepper
  • 2 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Cook cauliflower in microwave according to package directions. Drain, if needed.
  2. Place cauliflower in a bowl; add cheese and cream. Blend with a handheld mixer or mash with a fork. Stir in salt, pepper, and cilantro.
