Creamy Dijon-Lime Chicken Thighs
Goat Cheese-Cilantro Cauliflower Mash
Ingredients
- ¾ lb boneless, skinless chicken thighs
- 1 lime
- 2 Tbsp Dijon mustard
- 1 Tbsp mayonnaise
- ¼ tsp minced garlic
Instructions
- Preheat oven to 400°F. Place chicken in an 8-inch baking dish coated with cooking spray. Season with salt and pepper, if desired.
- Grate ½ tsp zest and squeeze 1½ tsp juice from lime.
- Combine mustard, mayonnaise, garlic, lime juice, and zest in a small bowl. Pour over chicken. Toss.
- Bake 25 to 30 minutes or until chicken is done. Drizzle pan juices over chicken before serving.

- ½ (16-oz) pkg frozen cauliflower florets
- ¼ cup crumbled goat cheese (1 oz)
- 3 Tbsp heavy cream
- ¼ tsp kosher salt
- ⅛ tsp pepper
- 2 Tbsp chopped fresh cilantro
Side Dish Instructions
- Cook cauliflower in microwave according to package directions. Drain, if needed.
- Place cauliflower in a bowl; add cheese and cream. Blend with a handheld mixer or mash with a fork. Stir in salt, pepper, and cilantro.
