Chicken with White Barbecue Sauce

Ingredients

  • 2 lb boneless, skinless chicken thighs
  • 1½ tsp pepper, divided
  • 1 tsp salt, divided
  • 2 Tbsp olive oil
  • ¾ cup olive-oil mayonnaise
  • 2 Tbsp water
  • 2 Tbsp white wine vinegar
  • 1½ tsp Creole mustard
  • 1 tsp prepared horseradish
  • 2 cloves garlic, minced

Instructions

  1. Sprinkle chicken with ½ tsp each pepper and salt. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes. Turn and cook 6 minutes.
  2. Meanwhile, whisk together mayonnaise, water, vinegar, mustard, 1 tsp pepper, horseradish, ½ tsp salt, and garlic in a bowl. Drizzle sauce over chicken or serve on the side.

  • 6 slices bacon
  • 1 Tbsp olive oil
  • 1 (12-oz) pkg broccoli slaw
  • 2 Tbsp apple cider vinegar
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook bacon in a large skillet over medium heat until crisp. Drain, reserving drippings in skillet. Crumble bacon.
  2. Add oil to drippings, and increase heat to medium-high. Add broccoli slaw, and stir-fry 2 minutes or until broccoli just begins to wilt.
  3. Stir in vinegar, salt, and pepper. Sprinkle with bacon.
