Chicken with White Barbecue Sauce
Warm Broccoli-Bacon Slaw
Ingredients
- 2 lb boneless, skinless chicken thighs
- 1½ tsp pepper, divided
- 1 tsp salt, divided
- 2 Tbsp olive oil
- ¾ cup olive-oil mayonnaise
- 2 Tbsp water
- 2 Tbsp white wine vinegar
- 1½ tsp Creole mustard
- 1 tsp prepared horseradish
- 2 cloves garlic, minced
Instructions
- Sprinkle chicken with ½ tsp each pepper and salt. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes. Turn and cook 6 minutes.
- Meanwhile, whisk together mayonnaise, water, vinegar, mustard, 1 tsp pepper, horseradish, ½ tsp salt, and garlic in a bowl. Drizzle sauce over chicken or serve on the side.

- 6 slices bacon
- 1 Tbsp olive oil
- 1 (12-oz) pkg broccoli slaw
- 2 Tbsp apple cider vinegar
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook bacon in a large skillet over medium heat until crisp. Drain, reserving drippings in skillet. Crumble bacon.
- Add oil to drippings, and increase heat to medium-high. Add broccoli slaw, and stir-fry 2 minutes or until broccoli just begins to wilt.
- Stir in vinegar, salt, and pepper. Sprinkle with bacon.
