Skillet Pepperoni Casserole
Simple Arugula SaladIngredients
- ½ lb ground Italian sausage
- 2 Tbsp olive oil
- ½ onion, chopped
- 3 cups no-sugar-added pasta sauce
- 1 (3.5-oz) pkg pepperoni, coarsely chopped
- 1 (16-oz) pkg zucchini noodles
- 1 cup freshly shredded whole-milk mozzarella cheese
- ⅔ cup shredded Parmesan cheese
Instructions
- Brown sausage in a large ovenproof skillet coated with cooking spray over medium-high heat. Drain and keep warm.
- Add oil to skillet. Cook onion in hot oil 4 minutes or until beginning to soften. Reduce heat to medium. Add cooked sausage, pasta sauce, pepperoni, and zucchini noodles, stirring gently to combine. Cook 3 minutes or until thoroughly heated. Remove from heat, and top with cheeses.
- Preheat broiler. Broil 2 minutes or until cheese begins to brown.

- ½ cup olive oil vinaigrette
Side Dish Instructions
- Combine arugula and vinaigrette in a bowl; toss.
