Skillet Pepperoni Casserole

Simple Arugula Salad

Ingredients

  • ½ lb ground Italian sausage 
  • 2 Tbsp olive oil
  • ½ onion, chopped
  • 3 cups no-sugar-added pasta sauce
  • 1 (3.5-oz) pkg pepperoni, coarsely chopped
  • 1 (16-oz) pkg zucchini noodles
  • 1 cup freshly shredded whole-milk mozzarella cheese
  • ⅔ cup shredded Parmesan cheese

Instructions

  1. Brown sausage in a large ovenproof skillet coated with cooking spray over medium-high heat. Drain and keep warm.
  2. Add oil to skillet. Cook onion in hot oil 4 minutes or until beginning to soften. Reduce heat to medium. Add cooked sausage, pasta sauce, pepperoni, and zucchini noodles, stirring gently to combine. Cook 3 minutes or until thoroughly heated. Remove from heat, and top with cheeses.
  3. Preheat broiler. Broil 2 minutes or until cheese begins to brown.

  • 4 cups arugula
  • ½ cup olive oil vinaigrette

Side Dish Instructions

  1. Combine arugula and vinaigrette in a bowl; toss.
