Balsamic-Fig Chicken
Mashed Potatoes and French Green BeansIngredients
- 3 (6-oz) boneless, skinless chicken breasts
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 1 Tbsp olive oil, divided
- 2 small shallots, chopped
- 3 Tbsp red wine
- ¼ cup fig preserves
- ¼ to ⅔ cup low-sodium chicken broth
- 1 Tbsp balsamic vinegar
- 1½ tsp chopped fresh thyme, divided
Instructions
- Preheat oven to 400°F. Sprinkle chicken with ¼ tsp each salt and pepper.
- Cook chicken in ½ Tbsp hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until browned.
- Transfer chicken to a foil-lined rimmed baking sheet. Bake 10 minutes or until chicken is done.
- Heat ½ Tbsp oil in same skillet. Add shallots, and cook 2 to 3 minutes or until lightly browned. Add wine, scraping skillet to loosen browned bits.
- Add preserves, broth, vinegar, 1 tsp thyme, and ¼ tsp each salt and pepper; cook 2 to 3 minutes or until slightly thickened. Serve sauce with chicken. Sprinkle with ½ tsp thyme.

- 1 (8-oz) pkg trimmed French green beans
- 2 Tbsp low-sodium chicken broth
- ¼ tsp dried thyme
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Heat mashed potatoes according to package directions for the microwave.
- Meanwhile, bring green beans, broth, thyme, salt, and pepper to a boil in a large skillet. Cover, reduce heat, and simmer 5 minutes or until beans are crisp-tender.
