Balsamic-Fig Chicken

Mashed Potatoes and French Green Beans

Ingredients

  • 3 (6-oz) boneless, skinless chicken breasts
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 1 Tbsp olive oil, divided
  • 2 small shallots, chopped
  • 3 Tbsp red wine
  • ¼ cup fig preserves
  • ¼ to ⅔ cup low-sodium chicken broth
  • 1 Tbsp balsamic vinegar
  • 1½ tsp chopped fresh thyme, divided

Instructions

  1. Preheat oven to 400°F. Sprinkle chicken with ¼ tsp each salt and pepper.
  2. Cook chicken in ½ Tbsp hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until browned.
  3. Transfer chicken to a foil-lined rimmed baking sheet. Bake 10 minutes or until chicken is done.
  4. Heat ½ Tbsp oil in same skillet. Add shallots, and cook 2 to 3 minutes or until lightly browned. Add wine, scraping skillet to loosen browned bits.
  5. Add preserves, broth, vinegar, 1 tsp thyme, and ¼ tsp each salt and pepper; cook 2 to 3 minutes or until slightly thickened. Serve sauce with chicken. Sprinkle with ½ tsp thyme.

  • 1 (8-oz) pkg trimmed French green beans
  • 2 Tbsp low-sodium chicken broth
  • ¼ tsp dried thyme 
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Heat mashed potatoes according to package directions for the microwave.
  2. Meanwhile, bring green beans, broth, thyme, salt, and pepper to a boil in a large skillet. Cover, reduce heat, and simmer 5 minutes or until beans are crisp-tender.
