Enchilada Meatball Sandwiches

Ingredients

  • ¾ lb ground beef
  • ⅓ cup panko breadcrumbs
  • ¼ cup minced onion
  • 1 large egg, lightly beaten
  • ½ (1-oz) envelope taco seasoning mix
  • 1 (10-oz) can red enchilada sauce
  • 2 sub rolls, split and toasted
  • ½ cup shredded Cheddar cheese
  • ¼ cup sour cream
  • ½ (8-oz) container guacamole

Instructions

  1. Preheat oven to 350°F. Combine beef, panko, onion, egg, and taco seasoning. Shape into 2-inch balls, and place on a lightly greased wire rack on a rimmed baking sheet. Bake 20 minutes.
  2. Heat enchilada sauce in a large skillet over medium heat. Add meatballs, and simmer 15 minutes.
  3. Spoon meatballs and sauce into toasted rolls; top with cheese, sour cream, and guacamole.

  • 1 (15-oz) can black beans, drained and rinsed
  • ½ cup fresh salsa
  • ½ tsp Mexican seasoning
  • ½ (16-oz) pkg tortilla chips

Side Dish Instructions

  1. Combine beans, salsa, and seasoning. Serve salsa with chips.
