Classic Meat Loaf

Green Beans with Pecans and Mashed Potatoes

Ingredients

  • ¾ lb ground beef 
  • 1 Tbsp tomato paste
  • 1 large egg, lightly beaten
  • ⅓ cup panko breadcrumbs
  • 1 Tbsp Dijon mustard
  • 1 Tbsp Worcestershire sauce
  • ½ cup ketchup
  • 2 Tbsp balsamic vinegar

Instructions

  1. Preheat oven to 400°F. Stir together beef, tomato paste, egg, breadcrumbs, mustard, and Worcestershire. Season lightly with salt and pepper.
  2. Press mixture into a lightly greased 8- x 4-inch loaf pan. Bake 45 minutes.
  3. Stir together ketchup and vinegar; spread over top of loaf. Bake 10 to 15 minutes longer or until loaf is no longer pink in center. Let stand 10 minutes before slicing.

Side Dish Ingredients

  • ½ (15-oz) pkg frozen green beans
  • 1 Tbsp butter
  • 1 (2-oz) pkg chopped pecans
  • 1 (8-oz) pouch buttery homestyle mashed potatoes

Side Dish Instructions

  1. Cook green beans according to package directions.
  2. Melt butter in a skillet over medium heat, and add nuts; cook 5 minutes or until toasted and fragrant. Stir in beans; add salt and pepper to taste.
  3. Prepare potatoes according to package directions.
