Classic Meat Loaf
Green Beans with Pecans and Mashed Potatoes
Ingredients
- ¾ lb ground beef
- 1 Tbsp tomato paste
- 1 large egg, lightly beaten
- ⅓ cup panko breadcrumbs
- 1 Tbsp Dijon mustard
- 1 Tbsp Worcestershire sauce
- ½ cup ketchup
- 2 Tbsp balsamic vinegar
Instructions
- Preheat oven to 400°F. Stir together beef, tomato paste, egg, breadcrumbs, mustard, and Worcestershire. Season lightly with salt and pepper.
- Press mixture into a lightly greased 8- x 4-inch loaf pan. Bake 45 minutes.
- Stir together ketchup and vinegar; spread over top of loaf. Bake 10 to 15 minutes longer or until loaf is no longer pink in center. Let stand 10 minutes before slicing.

- ½ (15-oz) pkg frozen green beans
- 1 Tbsp butter
- 1 (2-oz) pkg chopped pecans
- 1 (8-oz) pouch buttery homestyle mashed potatoes
Side Dish Instructions
- Cook green beans according to package directions.
- Melt butter in a skillet over medium heat, and add nuts; cook 5 minutes or until toasted and fragrant. Stir in beans; add salt and pepper to taste.
- Prepare potatoes according to package directions.
