Spring Pea and Leek Risotto with Bacon

Ingredients

  • 3 slices bacon, chopped
  • 1 cup thinly sliced leek (white and light green parts only)
  • ¾ cup gluten-free chicken broth
  • ½ Tbsp gluten-free all-purpose flour
  • 1 oz cream cheese (about 2 Tbsp)
  • 1 (8.8-oz) pouch gluten-free microwavable jasmine rice
  • ½ cup frozen green peas, thawed
  • 2 Tbsp freshly shredded Parmesan cheese

Instructions

  1. Cook bacon in a large nonstick skillet over medium heat 6 to 8 minutes or until crisp. Remove bacon from skillet, reserving drippings in skillet.
  2. Rinse leek under cold water; pat dry. Cook leek in hot drippings 8 to 10 minutes or until browned, stirring occasionally.
  3. Whisk together broth and flour in a bowl. Add broth mixture to skillet; bring to a boil. Add cream cheese; stir until melted.
  4. Meanwhile, microwave rice according to package directions. Add rice, peas, and desired amount of salt and pepper to sauce; simmer 5 minutes or until thickened, stirring often. Remove from heat; stir in Parmesan. Sprinkle with bacon.

  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 1 (5-oz) pkg mixed baby greens
  • ½ cup grape tomatoes, halved
  • 2 Tbsp chopped fresh parsley

Side Dish Instructions

  1. Whisk together oil, vinegar, and desired amount of salt and pepper in a bowl. Add greens, tomatoes, and parsley; toss.
