Cheesy Baked Grits with Sausage

Ingredients

  • ½ cup quick-cooking grits
  • ½ lb lean turkey breakfast sausage
  • 1 small red bell pepper, chopped
  • 1 large egg, lightly beaten
  • ½ tsp pepper
  • Pinch of salt
  • ½ cup shredded 75%-less-fat white Cheddar cheese (see Note)
  • Chopped fresh chives (optional)

Instructions

  1. Preheat oven to 350°F. Cook grits according to package directions.
  2. Cook sausage and bell pepper in a large nonstick skillet over medium heat 4 minutes or until sausage is browned, stirring to crumble; drain on paper towels.
  3. Stir together cooked grits, egg, salt, and pepper in a large bowl.
  4. Stir in sausage mixture and cheese. Pour grits mixture into an 8-inch baking dish coated with cooking spray.
  5. Bake 25 to 30 minutes or until golden brown and bubbly around edges. Serve sprinkled with chives, if on hand.

Side Dish Ingredients

  • 2 large tomatoes, sliced
  • 2 tsp balsamic vinegar
  • 1 Tbsp thinly sliced fresh basil (optional)

Side Dish Instructions

  1. Arrange tomato slices on a platter. Drizzle with vinegar, and sprinkle with basil .
