Philly Cheesesteak Tacos

Ingredients

  • 1½ lb flank steak
  • 1 tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil, divided
  • 2 onions, sliced 
  • 2 red or green bell peppers, cut into strips
  • 12 corn tortillas, heated
  • 2 cups shredded mozzarella cheese (or use provolone cheese)

Instructions

  1. Sprinkle steak with salt and pepper. Cook in 1 Tbsp hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or to desired doneness. Remove from skillet. Let stand 5 minutes; thinly slice across the grain.
  2. Cook onions and bell peppers in 2 Tbsp hot oil in same skillet over medium-high heat 8 to 10 minutes or until tender. Season with salt and pepper to taste. Add beef to skillet, tossing to combine.
  3. Serve beef mixture in tortillas; sprinkle with cheese.
