Ginger-Hoisin Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • ⅓ cup sweet and sour sauce
  • ¼ cup water
  • 3 Tbsp hoisin sauce
  • 2 Tbsp minced garlic
  • 1 Tbsp ginger paste

Instructions

  1. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Cook chicken in hot oil, in batches if necessary, in a large skillet over medium-high heat 6 minutes per side or until done.
  3. Meanwhile, stir together sweet and sour sauce, water, hoisin, garlic, and ginger paste in a saucepan. Bring to a boil over medium heat, stirring often. Reduce heat, and simmer 3 minutes, stirring often. Serve chicken with sauce.

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 2 (8-oz) pkg snow peas
  • 3 Tbsp low-sodium soy sauce
  • 3 Tbsp sesame seeds

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook snow peas according to package directions. Stir in soy sauce and sesame seeds.
