Grill Pan Mojo Chicken Breasts

Steamed Broccoli and Quick-Baked Sweet Potato

Ingredients

  • 2 oranges
  • 2 Tbsp chopped chipotle peppers in adobo sauce
  • 6 cloves garlic, minced
  • 2 tsp dried thyme
  • 1 tsp salt
  • 3 bone-in chicken breasts (1½ to 2 lb)

Instructions

  1. Grate zest and squeeze juice from oranges.
  2. Whisk together orange zest, orange juice, peppers, garlic, thyme, and salt in a bowl.
  3. Add half of marinade to chicken in a large zip-top bag. Seal bag, and turn to coat; reserve remaining marinade for basting.
  4. Marinate chicken in refrigerator 30 minutes, turning bag once or twice.
  5. Preheat a grill pan rubbed with oil to medium-high heat. Remove chicken from marinade; discard marinade. Add chicken to pan.
  6. Cook 20 to 25 minutes, turning and basting occasionally with reserved marinade, until chicken is done. Let stand 10 minutes; cut chicken breasts in half to serve.

Side Dish Ingredients

  • 3 (12-oz) pkg broccoli florets (or use frozen)
  • ¾ tsp salt
  • ½ tsp pepper
  • 6 small microwavable sweet potatoes
  • 6 Tbsp butter

Side Dish Instructions

  1. Steam broccoli according to package directions. Toss with salt and pepper.
  2. Microwave potatoes according to package directions; cut a lengthwise slit on top of each potato, and fluff with a fork. Top with butter.
