Mediterranean Tuna Tabbouleh

Ingredients
- 1 cup bulgur wheat
- 1 cup boiling water
- ½ cup fresh lemon juice
- ¼ cup extra virgin olive oil
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 4 (5-oz) cans wild-caught albacore tuna, drained
- 1 pint grape tomatoes, halved
- 1 English cucumber, diced
- 1 cup chopped fresh parsley
- ½ cup chopped green onions
Instructions
- Place bulgur and boiling water in a small bowl; let stand 20 minutes.
- Meanwhile, whisk together lemon juice, oil, garlic, salt, and pepper.
- Combine bulgur, tuna, tomatoes, cucumber, parsley, and green onions in a large bowl.
- Drizzle with dressing; toss. Chill until ready to serve.
