Prosciutto Tortilla Pizzas

Ingredients

  • 4 whole wheat soft taco-size flour tortillas
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • ½ (8-oz) block mozzarella cheese, thinly sliced
  • 1 (4-oz) pkg thin slices prosciutto
  • 2 cups baby arugula
  • Lemon wedges (optional)

Instructions

  1. Preheat oven to 450°F. Place tortillas on two baking sheets. Brush with oil and sprinkle with garlic; bake 5 minutes.
  2. Top tortillas with cheese; bake 5 minutes or until cheese is melted and tortillas are crisp.
  3. Arrange prosciutto and arugula over pizzas. Serve with lemon wedges, if desired.
